Fara's Restaurant at the Villa Rose Hotel is an evening restaurant built around seasonal Irish produce, confident cooking and a warm, relaxed approach to hospitality.

The food starts with good ingredients and doesn’t try to hide them. Menus change with the seasons, combining familiar flavours with thoughtful cooking, proper technique and a few things you might not expect.

At Fara's, the cooking is seasonal, confident and grounded in good Irish produce, from fresh Killybegs seafood by Albatross Seafoods to top-quality Irish beef sourced right next door at McConnell Meats. Innovative flavours, timeless classics, and genuine Donegal provenance on every plate.

There is technique behind it, but it doesn’t need explaining at the table. The aim is food with balance, proper flavour and enough restraint to let the ingredients do the talking.

We're not trying to own your New Year's Eve. We just want to make sure your year ends with a bloody good dinner. Take your table at Fara's before the rest of the night begins. Bubbles waiting when you sit down. Something from the kitchen before you've even opened the menu. A three-course dinner made for the occasion.

Then midnight is yours. Meet your friends. Find the party. Head home together, or stay out until the first morning of the year. Either way - the year ends properly, around a table worth sitting at.

At Fara's, Richard works alongside his brother Andrew and the kitchen team to create seasonal, confident dishes built around balance, flavour and quiet precision.

There is no interest in adding something simply because a plate looks empty.
